Why can't we fly?
Why can't we breath underwater?
Why can't we see in the dark?
Why do we die? Why do turtles and parrots have greater longevity?
Why can't apes speak?

Evolution is not that. The "apex" of evolution is what survives. Very many, many species have survived. Many more have not.

It is only hubris to think that humans are the crown of creation.

we don't have gills

Our eyes haven't evolved to see in darkness as some animals have...

Everything dies... Some things have longer lives then we do (thank God)

Some apes can use sign language... which is similar to speaking

Actually this scenario would invalidate evolution. Wouldn't it make sense to understand what the Modern evolutionary Synthesis actually postulates prior to making statements that do nothing more than demonstrate that despite protestation to the contrary, you don't actually understand the science you are disputing?

No, faith doesn't make you a fool. Having faith is just fine. Plenty of prominent scientists who promote the evidence supporting MES, like Francis Collins for example, are very devout in their faith. It's insisting that there is design while providing zero evidence for it is a little foolish however.
