Is it possible that this is a case of epigenetics, that a silenced gene was there the whole time and something triggered it to turn on, so that it could use citrate as a food source in an oxygenated environment?

Pretty sure the replies to that video on Youtube say more then the video does...

Nothing to see here

Can your eye see without any given protein?
Can you impregnate a goat?
If your dna has a defect say you are down syndrome is that a guarantee your child will be?

If evolution is all that human beings would be the apex of evolution...

Why can't we fly?
Why can't we breath underwater?
Why can't we see in the dark?
Why do we die? Why do turtles and parrots have greater longevity?
Why can't apes speak?

Evolution is not that. The "apex" of evolution is what survives. Very many, many species have survived. Many more have not.

It is only hubris to think that humans are the crown of creation.

We don't have wings...

we don't have gills

Our eyes haven't evolved to see in darkness as some animals have...

Everything dies... Some things have longer lives then we do (thank God)

Some apes can use sign language... which is similar to speaking

Ok I can accept that...

I'd rather be a dolphin or an eagle...
But then I couldn't argue here... hmmm...

...How can you protect yourself from the types of people that the Bible calls “profitless talkers” and “deceivers of the mind”? (Titus 1:10) Once you are familiar with some of their tricks, you are in a better position to evaluate any message or information that comes your way. Here are some ways to do this.

Be selective:...

Use discernment:...

Put information to the test:...

Ask questions:...

Do not just follow the crowd: If you realize that what everybody thinks is not necessarily correct, you can find the strength to think differently. While it may seem that all others think the same way, does this mean that you should? Popular opinion is not a reliable barometer of truth. Over the centuries all kinds of ideas have been popularly accepted, only to be proved wrong later. Yet, the inclination to go along with the crowd persists. The command given at Exodus 23:2 serves as a good principle: “You must not follow after the crowd for evil ends.”

Hey when 2 birds or dogs make something that's not birds or dogs I'll be a believer?

Actually this scenario would invalidate evolution. Wouldn't it make sense to understand what the Modern evolutionary Synthesis actually postulates prior to making statements that do nothing more than demonstrate that despite protestation to the contrary, you don't actually understand the science you are disputing?

Does my faith change the facts that genetically speaking new species due to hybridization are only capable because of predetermined genetic ability to do so?
That's design...

No, faith doesn't make you a fool. Having faith is just fine. Plenty of prominent scientists who promote the evidence supporting MES, like Francis Collins for example, are very devout in their faith. It's insisting that there is design while providing zero evidence for it is a little foolish however.
