Nice. I love a good short rib. You should try lamb neck. That is my personal favorite.

Made barbacoa this past weekend. Smoked the cheeks for about 5 hours, then put into a braising liquid (beef stock, garlic, and onion) until they could be shredded.

I really like pig cheeks better overall...but barbacoa is one of my favorite mexican dishes. And beef cheeks are so inexpensive, i can make them just about whenever I want. I have 2 more 3lb packs in the freezer.
