The word "baphomet" was probably a simple mishearing of the name Mahomet. The crusaders understood the Muslims to be worshipping their prophet.
The idol "baphomet" is almost certainly the invention of the fertile minds of the men who interrogated the Knights Templars with a view to extracting incriminating confessions.
