Fascinating discussion at the pub - what's the difference between green and white asparagus?

Apparently it's the same plant, just the green shoots are exposed to sunlight, while the whites are covered in soil and all kinds of things (known as "blanching") to prevent them from developing chlorophyll in response to sunlight.
