Wow!!! I WOW!!! I actually won!! I can usually place or show, but this time we won!! 1st prize.

Took a different cut of meat and dazzled 'em. Didn't have much time, but I got a smoke-ring on it (maybe 1/4" deep) and it came out wonderfully medium rare!! When I started cutting the beef down it was amazing. I was sooooo happy. I had put some truffle in the marinade to give it a distictive flavor...it was dripping juice. I'm over the top!! No major prizes other than bragging rights, but all the same it's awesome!!

"Smoked" the competitors... It was a hard day, but we put some serious heart into this competition.

Yep... braggin’ rights sure is important to some nowadays... but I guess thats the point of a competition.

There's not much left for pictures. I should have taken pictures, but there's just no time.

Recipes... well, the roast (the winner) was pretty simple...

1. Roast to room temp
2. Straight olive oil on the roast, all sides.
3. Cavender's Greek seasoning all around
4. Cabela's Prime Rib rub all around
5. 3 hours of Alder wood smoke
6. Onion and garlic powder
7. fire up the smoker to grilling temps
8. PERFECTION!!

Oh, pull the meat at about 120F IT, rest in tin foil with water or wine.

Thin sliced with truffle oil and porcini gravy.

Magnificent!!

The gravy was home made. Porcini mushrooms and gravy. The truffle oil was over the top of the meat, a quick casting/drizzle. (but now I'm saying too much).

I've served up wild boar testicles and armadillo that had everyone raving about how delicious it was until they found out what they had eaten.
Many of them seemed to feel disgusted and violated afterward.
The one's who wanted second helpings...those are the ones I trust as friends.

Congrats on bringing home the bacon, you've proven that you can meat the standards of the judges, and i'm sure the competition knew when their goose was cooked...okay i'm all outta puns.

All I know is potato bake and roast beef rolls with Au Jus, which would amaze absolutely no one. Enjoy the spoils of victory.
