Who eats that stuff? People who were likely on the cusp of starving and needed to eat whatever they could. Then the foods just sort of stayed in the culture once they were embedded there.

The ones that get me are the foods that are deadly poisonous unless prepared a certain way, and some of the preparations are very elaborate and particular. That makes you wonder how desperate people had to be to eat to keep tinkering with something until it finally didn't kill someone.

I looked it up before, it takes 6 months to make it, I seriously doubt someone on the cusp of starvation. More like it was a way to preserve the food, but then who am I to talk. I LOVE anchovies and fish sauce, and if you've seen how they make fish sauce, you'd find chunks in your mouth.
