I make a lasagna with zucchini in place of the noodles. I use a mandolin slicer on the zucchini so it's evenly sliced. My very picky daughter prefers it over real noodles.

If you're craving sweets would honey work or are there carbs in that? I really don't know about that stuff. It's just a suggestion. I eat anything I want. I don't gain weight.

I have been steaming the zucchini prior to layering, but the lasagna is a bit watery. My mom suggested roasting it a little, instead of steaming, in order to dry it out more. Next time I make it I plan to see how that works. Hope you like it!
