oxalates can cause kidney stones. Many people lack adequate enzymes to break them down properly. We need some in our diet, just not too much. They can also cause calcium oxylate deposits in other organs including the circulatory system, and can cause some crystals to form in places like the knees and other joints. moderation is the key, having one of these dishes occasionally is not going to hurt the majority of people, but too much is not good. The reason that people get stones is because the kidneys take it out of the blood and put it into the urine to dispose of excess amounts of calcium and oxylate.

There are some things that supposedly keep the oxylate and calcium from increasing, I think apple cider vinegar and some oils can keep them from combining, but I am not sure how to use them.

a reply to: halfoldman --- the chef had me until he mentioned halloumi cheese, which is insanely high in saturated fat. Sorry about that.

As far as oxalic acid goes, I don't see anything in this recipe which contains oxalates (except watercress, which has some oxalic acid, but not a lot). A lot of early macrobiotic writers used to warn about the oxalic acid content of spinach, and they were right about that, but in the 21st century, widely available baby spinach has zero oxalic acid ... yay!
