AAAAH, OK, but my head tells me that I've seen fotage when this happends above "ordinary" ground... Is my head finally cracking or what...??

Even above hard ground there is some level of humidity and water vapor, dirt, sand...something will be there to show the shockwave.

That's a Blue Angel. He's not breaking the sound barrier. They're not allowed to during their show. They can get close, but they can't go supersonic.
