Mandarin Almond Salad

This is something that all Foodies out there have to try if they like crunchy tangy salads!

Its deliciously wonderful, and fantastic on a hot day, with a beer of course




1 Package of Baby Spinach

2 cans of Mandarin Oranges... Fresh oranges work too but this is less work

1 package of sliced almonds Toasted
(toss entire package into a dry pan on medium heat... toss until you can smell them or til you see a slight sear)

1 Small onion cut in half, sliced thin

1/3 of a cup of red wine vinegar...

2/3 of a cup of extra Virgin olive oil

Note
IF you're not a big fan of strong onion taste slice the onion first, then submerge in ICE COLD water for 15 mins

Add ingredients to a bowl and toss to mix...

2 pinches of salt & pepper

Season to taste of course

You'll love it!!

Ohhh, that looks good. Spinach is 'the best' substitute for lettuce in a salad ... and it is sooo good for you. I used to grow the best crops and I miss fresh baby spinach the most.

That looks delicious, thanks for sharing.
having recently started to eat healthier, and cutting down on meats, I too have been creating my own salads and vegetable dishes.
If only i were strong enough to say no to dessert!
