Or, it could be nothing more than dielectric absorption and non-linearity. Very few capacitors discharge in a nice orderly fashion if you're examining it on a tight scale. That's why you use certain types of caps in A-D circuits and not others.

Thank you to everyone for their interesting and helpful comments. I find that the effect I described, of small variations of capacitor discharge rate over very short spans of time, persists in a 'hands off' mode. Body capacitance can probably be ruled out.
To deal with a number of other concerns that were raised, I next propose to try the experiment with a large air gap capacitor, at a location well away from other electrical devices, electrical wiring and radio frequency sources. Will report back here with my results.
