just out of curiosity. does this occur every time you look at a clock or just like say one out of 60 times when its 11 or 1 o'clock. do you only look at the clock when its 11 something or 1 something? what happens when its 3 something? do you still see 11:11?

All calendars come to a term at the end of the final day.
The modern Western day ends at midnight, so our modern calendars end at midnight.
If this thing is supposed to be based on the ending of the Mayan calendar, then for the sake of consistency you should be looking at the end of the Mayan day.
What time is sunset in Yucatan?

One out of 60 times? More like twice a day for 2 years straight. Not much point in trying to make something out of it. We'll all find out in a few days whether it's B.S. or not. I'm still on the fence.

Mayans would have been central US time zone by their location. (GMT -6)

11:11 GMT would be 5:11 central US time
