From what I've read the disciplinary action came about because of the guys repeated theft of product.

Actually he was only ACCUSED of stealing. Maybe he did, maybe he didn't. But the fact remains that he was given the option to quit or be fired without any proof that any actual theft had occurred.

Company and union officials played a video. He calmly watched images that purportedly showed him stealing from a truck.

From the article

Words like "purportedly" and "allegedly" indicate to me a serious lack of evidence.

If the video proved he was guilty...shouldn't it just say "They played a video of him stealing merchandise"?

Oddly, the videotape which purports to show Thornton stealing beer apparently does no such thing:

Police arrest woman they say accepted beer from Connecticut shooter
edition.cnn.com...
East Windsor, Connecticut, police arrested Christy Quail, 33, and charged her with sixth-degree larceny after getting a videotape showing her accepting beer from a truck driven by Omar Thornton....
Thornton is not clearly shown in the videotape, which police are not releasing to the news media, Bourke said.
