this as good as you get at a restaraunt

ingredients

2 cups shredded sweetened coconut
2 cups bread crumbs
salt and pepper
2 cups flower
4 eggs beaten
24 large shrimp peeled and deveind
veg. oil for frying

combine coconut and bread crumbs sesason with salt and pepper
dredge shrimp in flower dip in eggs and coat in coconut mixture deepfry in oil at 350deg. 3 to 4 minutes per batch drain on paper towels

Sounds good.
The recipe I use is slightly different.

I make a beer batter and dry the shrimp and dredge in flour. I then dip it in the beer batter and then roll it in coconut.
It makes for a nice puffy delicious shrimp.
Rolling inf lour prior to dipping in batter is essential - the batter will mess up if you skip that.

Also, I use a nice spicy Thai pepper dip, or orange marmlade mixed with horseradish, cayenne, parsely and pink peppercorns.

I don't eat shrimp, but you can prepare strips of chicken breast in the same way, it's really good.
