One white loaf.
430 grams ap flour.
1/4 tsp instant yeast.
1 1/2 cups water.
2 tsp K. Salt.
Combines water with flour / yeast / salt
If not mixing immediately do not combine
Salt and yeast. They will interact.
Mix dough with your hand or silicone spat.
Let rest and cover with plastic for 18-22 hours. Look for action on the top of dough to see if it is ready.
Dump dough onto a flour dusted work surface / cutting board. Wait about 15 minutes then fold onto itself twice.
Dust with flour and flip onto flour dusted towel so the seam is down on the work surface. Dust with more flour. Cover lightly with towel and let rise
2 hours. It’s ready when the dough indents and doesn’t spring back.
Have you oven about 450. (459-500).
Flip into a blazing hot dutch oven so the seam side is up. Shake a few times, cover and return to oven for 30 min. Uncover for the last 20 or so.
I was given this recipe years ago by a friend in nyc. It’s a no fail bread.
