Lockdown blues. So bored of this routine.

So I made the least exciting bread there is. Country White.







I also made wontons yesterday. Made a dashi and a Japanese chicken broth. Did a 40/60 mix of the two

Did I mention how bored I am???

Apparently I am doing a popup soon for a place in town. That will be a fun 3 days.

Unbored me ats. I beg of you. Don't even flag this thread. Just post hot food pics that are sexy. Somewhere out there is a conspiracy theorist who is also like a mexican, asian, indian chef. Talk to me. Be my spirit guide.

Gross- so I take it you are now like George of Seinfeld? Remember the episode where he tried combining food and sex? It didn’t go well. 😂

I’ve never understood the applying of the description “sexy” to things that have nothing to do with sex. “That’s a sexy chicken dish.” “Look at that sexy 4-wheeler.” Etc.

Maybe you meant that you wanted us to post pictures of food being held or eaten by sexy women. In that case, what food would you like for me to take a picture of myself holding? 😜

It’s a kitchen thing. When you are chefs and cooks you work so hard to understand product, flavor, timing. When it comes together it is better than sex.

And please take a picture holding something that is sexy. No green fruits or overcooked chickens.

One white loaf.

430 grams ap flour.

1/4 tsp instant yeast.

1 1/2 cups water.

2 tsp K. Salt.


Combines water with flour / yeast / salt

If not mixing immediately do not combine
Salt and yeast. They will interact.

Mix dough with your hand or silicone spat.
Let rest and cover with plastic for 18-22 hours. Look for action on the top of dough to see if it is ready.

Dump dough onto a flour dusted work surface / cutting board. Wait about 15 minutes then fold onto itself twice.

Dust with flour and flip onto flour dusted towel so the seam is down on the work surface. Dust with more flour. Cover lightly with towel and let rise 2 hours. It’s ready when the dough indents and doesn’t spring back.

Have you oven about 450. (459-500).

Flip into a blazing hot dutch oven so the seam side is up. Shake a few times, cover and return to oven for 30 min. Uncover for the last 20 or so.

I was given this recipe years ago by a friend in nyc. It’s a no fail bread.

Hey, I'll never miss a good bread thread!

I made these mini slider buns two weeks ago (they'd look cooler had I used the egg wash on top, but it was just me and my honey so I skipped that step) for some "wagyu" sliders w/ blue cheese


They were really good.

Looking real fine. Love the pickle. I believe the burger should usually come with pickle slices. It adds that extra layer to the flavor
