i have eaten arugula every night, in one form or another, for about a month now. Typically a blend of spinach and arugula with a vinagrette that i usually make every couple of days.

I dont know if your into juicing at all, but here is a hint....
If you love this stuff, well like I do you you might love it juiced!

I add it to a blend of carrot, beet, cucumber, lemon, parsley, ginger...
its awesome that way too.

I have even dropped it into my minestrone soup as well.

And, did I mention I love it on Pizza too?

Oh my gosh, just try some on a thin crust with lots of fresh tomato
and garlic sauce, a bit of cheese, caramelized onion takes it over the top,
drop on that arugula and its like a green heaven!

if you place a hot, fresh off the heat fish fillet on a small bed of arugula and razor thin radishes, it makes the perfect wilt You can just use something like a lemon or lime and chili crema as a garnish/sauce. Arugula is great cooked, and can be treated almost just like spinach.

My wife had a prosciutto pizza with arugula on top (after it was cooked) and drizzle of vincotto about 5 weeks ago, hasn't stopped thinking about it. Pizza and salad all in one smh

Bacon, Arugula and Tomto sandwich is to die for. Good stuff!

My only problem is I can't seem to eat it all and always have to throw away some of it. The boxes are to big and it gets all wilty by the third day after opening it.

Use it as a steamed green on day 2 or 3. You can toss some bacon grease into a skillet, once hot throw in the arugula. Maybe a splash of balsamic vinegar to give it moisture and some flavor

Never been one for steamed/cooked veggies to much anyways. I prefer raw.

But I'll give it a whirl. Ya never know. After all, I hate cabbage but love me some good Kim-Chi.

If you like arugula you would probably like mizuna too, a mustard green. Have you tried it?
