Yam this tasted good...I suppose there's potassium,beta-carotene,vitamin A,C and some calcium.
4 nice size yams,peeled and sliced crosswise...1/4-inch thick rounds
2 teaspoons grated ginger root
1 tablespoon brown sugar
3/4 cup unsweetened apple juice
preheat oven 425 F
Mix everything up(I did the ziplock shake to it)
Bake uncovered in a casserole dish for about 30 min.
Yams turn out golden brown and most of the liquid evaporated...nice side dish
