Huevos Rancheros - My Way :)

You start with a coupla corn tortillas ... and just a bare few drops of olive oil

Bring the pan up to heat, add the mere touch/drops of olive oil , followed by the corn tortillas.

only long enough on each side to soften and make them a bit more pliable.

Spread generously with a good coating of pre-heated refried beans ... top with sauted onions.



Fry two eggs overeasy, sprinkled lightly with cumin, chili powder, salt and cracked pepper.

add them:


some shredded cheddar:


ladle on some good homemade salsa and a dollop of sour cream:

topped with a fresh-cut sprig of cilantro

add to that some crisp torillas and extra salsa:


You'll have a breakfast that'll leave ya not wanting for lunch.

These look delicious and I'm starving! I was just telling chat Im eating triscuits and cream cheese, and now Im tempted to get up and make these now....it wouldnt take that much time.

This is quick and easy plus I can think of some other things I'd add like a green pepper!

First thing I saw too! But Natty is not so much of a breakfast beer, that is unless you havnt gone to bed yet, in that case, pop it open with the huevos rancheros.
