It's Crock Pot Chili season again, and as such I'm shamelessly bumping this thread!
I'm also updating the recipe to includ CUMIN, which I forgot when I originally typed this up, so here goes:
____________________________________________________
Dads Crock Pot Chilli
Into a large crock pot (slow cooker) add the following ingredients *in this order*
3-4 cups (dry) of your favorite beans
wash the beans, soak overnite and then boil for 2 hours to prepare. You can substitute 5-6 canned beans from the store, just be sure to rinse them
first.
1-2 lbs cubed chuck steak
cut in large chunks-browned and drained
2 16 oz. cans stewed/sliced tomatoes, fresh tomatoes can be substituted
2 medium to large onions of your favorite type (for this I use the purple ones)
cut the onions into large chunks
2 medium to large bell peppers
cut the peppers into large chunks
several cloves of garlic , finely chopped
2 or so tablespoons chili powder
1-2 tablespoons cumin
1 teaspoon oregano
1/4 - 1 teaspoon black pepper
(optional) 1/4 - 1 teaspoon salt
Once the ingredients are all in the crock pot, take a large spoon or ladle and slowly work it all the way to the bottom of the pot. Then carefully
pull the spoon up through the center of the ingredients and remove. Don't stir, just one pull from bottom to top.
If you cooked your beans you can "prime the pot" with a half to a cup of bean juice, or you can use plain water.
Put the slow cooker on low and let cook for at least 12 hours.
Enjoy the best chilli you ever had!!
