Being from La the Sportsman's Paradise I can say I have never eaten or heard of anyone cooking one with success. Nutria, Gar fish, crawfish sure but not Racoon. Not saying it can't be done just I have never heard of it and I lived in the sticks. I'd rather trap and eat squirrels first. There are too many of them to even consider racoons but I would eat them as a last resort. I imagine the meat being very greasy and gamey. Not worth the effort.

ive had two pet raccoons growing up.
dont eat them! they are as intelligent or smarter than dogs.

Very smart and they have damn near human hands which is one of the criteria by Neil deGrasse Tyson for a species to become intelligent. Have to be able to manipulate their environment. Around here they are well known to claw and chew through houses for shelter and get in attics. I knew a couple of good trappers growing up and they never messsed with Racoons, Possum or Armadillo. All can be eaten but there are much better options. The meat is not ideal. Might as well cook a skunk.

Raccoons don't have opposable thumbs but what they do with what they have is close enough.

They are intelligent enough not to eat.

Possums though...

They will eat into the anus of a carcass, go inside and then eat the insides.

Just live there for awhile.

I will swerve off of the road to run over one of them.

Hate them.

My bright or had a pet raccoon when I was a kid. We lived in a rural area and they found injured when it was and raised.
It’s pretty much a big stupid cat that eats everything, is obsessed with garbage and loves ripping up house insulation, skirting.

Their hands only look human, they can’t use them very well at all their fingers are semi locked in a karate chop.

bear meat is quite good. I too repeated the greasy meat myth, then my hunting partner dropped a blackie end of deer season, beginning of elk...damn good salami.

my Pyrenees and I had a competition goin with opposums a couple years ago...I shot 3, to her gobblin up 7, with intermittent baby bunnies.

If you’ve ever cooked chipmunk or squirrel, it’s very similar. Butter, Italian seasoning and some salt - roasted over flame or pan fried it’s good.

I think that recipe is good for any kind of meat. I'd add a cup of red wine before bake and less water.
