Easy Recipe - Arroz con Mariscos (Rice with Seafood)

This version is very simple and fun, taste really good and you will need some cold beers or a nice white wine if you want.

Wash the rice very well, add seafood broth (chicken broth works too), put some butter in the middle and boil, as soon you see the boiling starts, lower the flame and cook.

Now you have a nice white rice waiting for the rest.

Get some chopped onions, celery, peppers (I used yellow this time), garlic, parsley and tomato paste.

Caramelize the onions, peppers and celery. Add the garlic and then the tomato paste. Mix well and add chopped tomatoes and broth too. Let it cook for few minutes. You'll see bubbles again.

Get the seafood and shrimps into the mix.


It should look like this.

Now add all to the rice and mix well. While mixing, add salt, hot red pepper flakes and garlic powder.

That looks delicious and the colors so pretty.
What other seafood did you use besides shrimp? I'm thinking scallops and lump crab would be good.
Makes my canned tuna breakfast not so appealing anymore.

My wife got one of those seafood mix bags and one bag of shrimps too. Little bit of everything. I learnt to be flexible about the ingredients when I cook. Just add all the Love you can.

Looks yummy. I think pasta noddle can be used also instead of rice.
