Do you have a favorite recipe that you enjoy?
If so post it here and share it with others.

Heres one.

Chili Chicken
---------------

1 1/2 pounds boneless, skinless chicken thighs, chopped
1 (19-ounce) can whole tomatoes and green chilies, crushed
2 (28-ounce) cans black beans, (with liquid)
1 (15-ounce) can tomato sauce
1 (8-ounce) can tomato sauce
1 (12-ounce) can beer, (or substitute chicken stock)
5 tablespoons olive oil
1 large red bell pepper, seeded and diced
1 medium sweet onion, chopped
1/3 cup pitted ripe olives, sliced
1 cup baby corn (optional)
3 cloves garlic, minced
1 1/2 teaspoons cumin seed
1 tablespoon chili powder
1 teaspoon dried oregano
2 teaspoons minced cilantro leaves (optional)
1/2 cup shredded cheddar cheese
1/8 teaspoon salt
1/8 teaspoon black ground pepper

a tasty one thats good for me and my girlfriend(she doesnt like spicy food)

cheaters chicken curry

1 x pepper diced
1xmedium onion diced
2xtomato diced
2x tins of chicken in white sauce
1x table spoon of masala spices

nan bread to serve

1.peper,onions and tomato in pan with a bit of oil sweat them for 10 min.

add tins of chicken and spices...bring to simmer for 5 min and serve.

a good low fat soup...my fave
bbq tomato soup

2x red peppers...deseeded and chopped
4x tomatos...chopped in to inch chunks
1x red chilli...or as many as you like...diced

lea and perings sauce
salt
pepper

put the peppers tomato and chilli's in to a roasting tin and roast at 200'c for 15 min...then grill on high for 5min.

place in blender add the lea and perings ,salt and pepper...and blend.

at this point most soup recipes tell you to strain the soup..NO this is a rustic country soup and i find it nicer with the odd seed in.

This is some good stuff that will fill you up and stick with you for a while. We always make it for opening day of trout fishing, so we called it....

Opening Day Stew

1 lb ground beef (chuck)
16 oz can of pork + beans
1/2 green pepper chopped
1 small onion chopped
salt + pepper to taste

Saute the onions and green peppers until translucent.
Brown the ground beef, drain, add peppers and onions and pork + beans. Stir.
Salt + pepper the way you like.

Can't be easier than that!

Everyone loves my potato latkes.

6-8 fist size potatoes
1 medium size onion

Use a cheese grater to shred them into a bowl.
Wrap in a cloth and squeeze all the moisture out.
Really squeeze hard, you need to get rid of as much water as you can.

Combine with:

1 cup grated cheddar
1/3 cup flour
salt and pepper
a little garlic if you like.

Mix it all together and add 1 beaten egg.
Get your hands in there to make sure it's all mixed and sticky.


Make little patties with your hands, no bigger than 2 inches.
Drop them into a pan of hot oil, turning once, until golden brown.

Serve with sour cream.


Simple basic food that tastes soooo good.
