Never seen anyone chop a mushroom off a tree and fry it up tempura style in the woods, but Almazan's Kitchen delivers as always.
And the homemade sausage is making another appearance.

So many crunches.

Edit: Wow..I'm a know it all idiot and didn't watch the vid first....I presumed too much based off a thread title. That is also a delicious mushroom..although not in my aforementioned top five. That man is finding beautiful specimens though.


--We call them 'hen of the woods' where I come from. Same thing.
There's a local dude who is always foraging who will occasional bring me one when he finds a good patch.

I usually roast them with garlic and shallot and finish with bacon lardons and chopped parsley with a little sherry vinegar and sea salt.

When I'm not being all pretentious I beer batter(Budweiser) them and eat 'em with a dipping sauce. A garlic aioli or 'ranch'.

They really are good. And they're everywhere. Golden Chanterelles are still my favorite but these are definitely in my top five!

I really recommend folks get an edible mushroom reference(better yet a mentor) and see what might be available to them locally. It can be scary at first but once you can find your own food..man..Meaty local mushroom are a gift. And I say thank you every time.

It looks good! Tempura chicken always tastes incredibel with this sauce!
Plum Sauce:
1 cup plum preserves
4 teaspoons rice wine vinegar
1 tablespoon minced shallots
1 tablespoon light brown sugar
1 teaspoon minced garlic
1/2 teaspoon minced fresh ginger
1/4 teaspoon red pepper flakes
Pinch 5-spice powder
