Seirei no Moribito is about a female warrior named Balsa who becomes the bodyguard of a royal child. It's got a lot of fight scenes, is beautifully animated, and has a great soundtrack.

Cowboy Bebop.
A great story with an opening soundtrack that reminded all us nerds of how cool jazz is.
