My grill

Result
Needed

1 whole Chicken chopped with insides removed of course.

Two whole habenero peppers
one sprig fresh thyme
one lime freshly juice/or un-sweetened lime juice from bottle 1/4 cup
black pepper two table-spoon
salt 1/4 cup
all spice berries crushed
1/4cup cinnamon
1/3cup white vinager
1/4cup nut meg
about 10 stalks of escillions chopped
Celery one stalk ok.
bay leaves..for aroma and smoke.
one palm sized freshly chopped ginger or 1/4 cup ginger powder...I perfer (fresh ginger)
one blender
Pure all the above into blender and mix to a pulp. apply jerk rub onto chicken keep refrigarated for over night...best results.(do not freeze please)

for out doors cooking 1 grill with chalk-coal if you can get spiced woods great..light grill to medium flame cover grill with metal cover... add chicken grill for about 15min each side...check bone to see if it is white; served with cold drinks bread and salads.

for Indoor cooking pre heat oven at 300deg.have drip pan in place for catching fatty fluids.reduced temp;to 150deg turn periodically for 45 min: enjoy with good friends and

Hold on. Habaneros.
Jamaicans use scotch bonnet.
It may look the same but it's not.
The flavor is different. It's sweeter.

It's not really jerk chicken without scotch bonnet.

You are right but most folks scotch bonnet do not register keep in mind I am cooking in Japan

I love Jerk chicken.. when i tried at home it was disastrous, ask my mom to cook, she did an okay job but still not good as my friend's dad(Jamaican).. it was nice.

I go for the BBQ at his place every time, and Jerk chicken is always there!

How did you messed up..too much heat on the grill ??..if so that will blackened the out side and leave the inside un-cooked slow low fire nice n easy, I messed-up that way a couple of time especially when I tried to jerk pork ribs.
