Essentially this is simply just preparing the live animal for eating. The only difference is it is happening on the plate instead of behind the scenes
somewhere. Different...yes, and new to me as well. But I don't see the horror in it.
It's dead. It was dead before it hit the plate.
The salt is just causing a chemical reaction in the muscle tissue.
It does have to be pretty darn fresh though.
