This is a left over recipe from beyond.
-left over mashed spuds
-crushed crackers(left over in the cupboard)
-an egg,maybe 2(left over from 12 pack)
-left over cheese from tacos the other nite
-what ever spice appeals

...take a golf ball size of potato and pack it nice like a meat ball.Poke your pinky in it and stuff some cheese in it.Fill hole and roll the ball around in the (battered)egg...then roll that around in the crushed crackers.Repeat for as many balls you have.Place on cookie sheet in oven on 300 for 20 minutes...presto,crunchy leftovers

this looks delicious. I'll have to try it next weekend. I'm not the best cook (just ask my husband, hee hee) but I think I can make this.

Easy, thrifty, and ridiculously delicious!

I made these for the family this weekend, and they were a big hit. Thank you so much for sharing this
