Modified Artichoke - Asparagus Dip

2 whole heads of garlic (roasted in tinfoil at 325 for 1 hour)
1/2 can artichoke parts (brine not oil)
7-10 spears fresh asparagus (diced 1/2" long)
1 package cream cheese (room temp)
2 tbs capers (diced finely)
1/2 white/yellow onion diced
1tb olive oil
1tb butter
1 c grated cheddar (or mozarella or jack)
1/2 grated parmesan
salt n pepper to taste



Start by topping both heads of garlic and place in tin foil, drizzle with olive oil and bake @325 for 1 hr.

heat up small saucepan to med heat... add oil and butter, add diced onions and capers and saute til translucent, add asparagus and saute another 5 minutes, set aside. To a smallish 5x9 cassarole dish add sauted veggies, the cream cheese, diced artichokes, grated cheese, pepper, and squeeze the roasted garlic into the mix as well. Take a large spoon and mix fairly well and top with the parmesan. Bake for 30 min at 300 and serve with crackers or a really nice crusty bread. Eat this at least 3x a week and no external or internal parasite can stand it, its one of the best tasty cure alls.

This would be good with some pita chips or slices of bread.
