Homemade Mac and Cheese...

Macaroni 3 cups dry, then cook till aldente
Cheese 2 cups shredded cheddar, swiss or parmesan or combo add your fave
Milk 1 cup
Butter 4 tablespoons
Flour 1 tablespoon
Salt and Pepper to taste
Half & Half if you have it to make it super rich or extra milk for saucy.

Cook Mac...Make white sauce...with butter, flour, cook for 3 minutes till bubbly and straw colored, watch it or it burns. Add milk, heat while stirring and bring to near boil. Cook at that heat for 2-3 minutes. Add cheese to milk mixture. Salt & Pepper. Poor over Mac and Cheese.

For extra special, bake it in oven with breadcrumbs on top, with grated parmesan. To really make it super duper, add bacon, or bacon and diced tomato. Or, (add to white sauce) do a White wine, with some dijon alternate.

Leftovers are super!
