I was grumpy as hell when I wrote that response lol

Yes, 100 percent that method works with refrigeration.

It’s best to run water over the eggs when peeling from the fridge.

Crack them a small amount all over the shell

I'll try it ...so thanks.

Does it matter if the eggs are fresh, room temperature, or not?

I've been having a yen for eggs fried in ghee, with salt and pepper.

Still gonna do your method...soon.

If I have to do a steak in a cast iron pan I will use ghee.

Beautiful stuff

I got some that is infused with pink Himalayan salt.
Since I cannot use butter, due to a casein intolerance.

You may think that adulterates it, and for cooking it is over the top, I get that unsalted is better. But I like it for my fried eggs..

Well. Then.
I gotta say, for shelf life and flavor, beats butter everytime.
IMHO

Don't do that to butter, ghee is just a refined form of butter anyways...

I think I ran out of patience lol

5 and a half minutes. Eggs from fridge. Brought the water up to boil with eggs in water. A little ice bath in pot to shock the eggs. Easy.

Looks great, but a bit too underdone for me. Warm they would be awesome.
What would 6-7 minutes do?

Try 7 minutes on the dot. Then into an ice bath. The ice bath obviously stops the cooking process but it also makes the egg peelable.

Remember you used seven minutes as your mark and adjust from there the next time.
