Potatoes baked with sour cream, eggs and cheese.
I put garlic and fennel on it with rosemary. And it's totally not diet food, but I love it now in the colder days I have it as brunch instead of breakfast and lunch.
So I was wondering: does this have a name? I believe the 'sauce' is the same as in a Quiche?

I sometimes do a thing I heard called Twice baked potatoes.

You bake the spuds until the skins are crunchy then cut them in half, scoop the soft insides out and mash them. Add some seasoning of your choice with grated cheese* then stuff it all back in the skins with a topping of more grated cheese.

Ten more minutes in the oven and they're done.

Yours sounds more sophisticated, though.

*edit. You can add fried onions and peppers if feeling adventurous .

Yeah, although I'm cool with some eggs.

And in India they always cook with ghee or "clarified butter".

Ghee never goes off, and requires no refrigeration.

But butter does the job.

Potato casserole.

A friend of mines mom used to make this when I was a teenager. She used hash browns instead of whole potatoes. Called it hash brown casserole.

Well, combined with eggs, it's titled "< insert sound of vomiting >"

Otherwise, there's not much new about a baked potato with cheese and sour cream. it's just called baked potato, or a loaded baked potato if it had more on it like bacon bits.

But eggs, gross, come on.
