Yeah, yeah, I know most people like it with crayfish, but shrimp is what I can get here, and it's cheaper than beef.

So, Shrimp Etoufee is what's for dinner! Really good shrimp Etouffee!

Southern roux's are hard to make, Gumbo among the hardest, but I have always loved Etouffee. "Etoufee" means 'smothered' and it's over rice. It's just a rich sauce smothered over some good rice (but the rice is important)

Shirmps will do but you really need that muddy crawdaddy bouquet.
Making a good roux I'd easy
Throw a hand full of flour on the cast iron.
Stir it until it smells toasty
Chunk In. some butter and stir until. It looks like peAnut butter
Mmm...

Yummmm! That’s one of my favorite dishes. I had a roommate that was from Louisiana he and used to make it a lot. His mom would send him certain ingredients that were not available where we lived. Good Stuff dem Crawdad’s!

I like to watch some of the old Justin Wilson Cajun cooking shows on Twitch once in a while, they run them 24 hours a day on its own channel.
Never tried to make any of the recipes but they all look good.
