Yeah, yeah, I know most people like it with crayfish, but shrimp is what I can get here, and it's cheaper than beef.
So, Shrimp Etoufee is what's for dinner! Really good shrimp Etouffee!
Southern roux's are hard to make, Gumbo among the hardest, but I have always loved Etouffee. "Etoufee" means 'smothered' and it's over rice.
It's just a rich sauce smothered over some good rice (but the rice is important)
