That's because the big developers are going with the "games as service" model and in order to do that, you have to have an online connection and be playing against a lot of other people.
They want to package in loot boxes to encourage you to pay big bucks for the initial game and then pay $4 to $5 a pop for random chances to have bigger and better weapons or buffs in order to compete so they can milk more out of you.
All they care about is cash and friendly couch co-op game doesn't do much to generate that.
