My smoker is pretty idiot proof.

Proof is, I'm an idiot and have used it quite a bit, but never done a brisket before.

I like brisket, it would be a shame if you ruin it.


I don't know about the beer, wouldn't it be better if you just drank it when cooking it. I mean, the more you drink the better the brisket tastes.

How long does it take to smoke a brisket? Twelve beers if you are a slow drinker. If you are a fast drinker, the brisket will be done when you wake up.

Full disclosure and update. . . .


The wife, my bride and love of my life, my flower, my sun, my reason for living has canceled tonights smoking event.

She did not want it run unattended overnight.

Since she is the boss, she gets to call the shots.

So I will be waking up at 4 AM to get this started.

Good luck on your Brisket there Cowboy, you are a brave man regardless of what Augustus says.
Question, don't you need to be in Texas to cook a brisket properly? I have had some tasty brisket in Nashville though.
If it doesn't turn out, I may have some recipes for what to do with ruined dinner lying around LOL
Or, Gunther can have dinner tonight

Full disclosure. I use a Weber kettle for grilling and smoking. I find it much easier to regulate the temp. Put the coals on one side n a pan of water on the other. Meat goes over the water. Kingsford and wood chunks (not chips) to smoke. When smoking only add the chunks one time at the beginning. As stated above you should only smoke for 1-2 hours. Too much makes the meat bitter...

My attempt today is a mishmash of suggestions and ideas.

Right now I'm smoking it at 240F Will run at this for @ 10 hours.

Then I plan to place the brisket in a pan, foil over it and infuse with. . . . not beer apparently, but will pick up some apple cider vinegar.


I will cook that at 240F for another 3 hours, then let it rest and eat!


We will see. . . . . .

How many beers deep are ya? Im cleaning the smoker and preppin 6 racks of ribs for tomorrow, while putting a red palm oil finish on my grills cast iron grate, then some cherry brats for lunch.

No brisket this weekend...but soon, I just love smoked ribs and Ohio has really just came into grilling season (I grill in the snow sometimes.)

smoking stuffed mushrooms, grilled brussel sprouts with balsamic reduction, smoked corn on the cob and the wifes tater salad to go with tomorrows ribs...they only take 4 hours though, so I wont get as drunk.
