Yes they change color. Especially when eating or being attacked.

Thanks for the link. I figured it was going to be some sort of ink transfer. The guys still says it's a Blue Marlin in the article but I can tell you it is a sailfish. They are all part of the Billfish family but Blue Marlin don't have that elongated accordion dorsal fin. Besides Blue Marlin get in excess of 1000 pounds unlike their smaller cousins sailfish.
