No, not the ketchup...

Dang it...I swear, the last (3) Thanksgiving day's have always been windy. It's been perfectly calm for the last two weeks, but of course today it's windy as all get out!

We BBQ/Grill/Smoke our brined turkey's on Thanksgiving; it's a DELICIOUS tradition. When it's super-sonically windy (and cold), this becomes just a total blast!

It's getting there, but I wanted to have it off by 2pm. That ain't gonna' happen today!

Oh well. It's still gonna' be awesome!

We spatchcocked ours and roasted it after seasoning it under the skin and basting it with butter.

Took 90 minutes total, came out perfectly cooked with excellently crispy skin.

Although I admit having the capacity to smoke it in the bargain would be fine. The big problem with it at this time of year is that the weather won't always cooperate. Last year, we had a small ice storm going on, for example.
