I beg to differ with this last sentence of your post. Pork, so-called "pulled pork" is a rather recent meal fare into some of Texas fastfood establishments. It is getting popular in the state, but beef is the item for Texas eateries. Pulled pork is found hardly at all in most Texas homemade meals. Pork is big across the south the the east of Texas, but not Texas.
