Sausage making is an ancient art. dating back to the days before walk in freezers and prepackaged heat and serve little smokies.
In reality you can make decent sausage with nothing more than a knife.
Ancient art or not the wife and I use a Kitchen Aid stand mixer with a grinder and Stuffer attachments... I mean why make life harder on yourself than
it has to be, right? Let me say right from the start. my wife is the real sausage making queen! Her family has a Germanic background and that whole
side of the family are some wondrous cooks, esp when it comes to wild game.
Salami is a type of sausage too keeps forever and tastes so Day-am good too!

BTW one of my all time fav's is something called Teewurst if you ever find yourself in a German Deli ask for Teewurst and if you like it Here's a recipe

at least my in-laws turn it into one...
turning the garage into a production line... we men forced to do all the heavy lifting while the ladies take care of all the finer points, like
"Stop spilling your beer" and "For gods sake, would just go stand over there and get out of the way!"
Yup them Germanic Bavarian types are very serious about there sausage making, my part mostly ends at the field dressing and packing out... But that
whole family/community bonding deal is part of survival too.

I've made the hickory-smoked deer sausage. It's really good. I have sausage made almost every year. 95% of the time it's deer sausage. I also have
my buddy make deer bologna. If you've never tried it then I suggest you do so. I can live off that stuff. The other day, I made spaghetti with
Italian sausage in it. mm mm mmm. I love sausage of all kinds(keep your dirty remarks to yourselves.:mad lol
