The Williston is a renovated Elks Club. A humble restaurant with a good reputation for good food.

Well, with the oil boom here, The Williston was bought out, renovated and turned into an upscale restaurant.

Now I've dined at The White Elephant. Both of them. So I think that I have a good reference point.

I shared my meal with a lovely 18 year old Macallan scotch. They also had the 24 year old, but I was timid and not ready for the more experienced scotch.

I enjoyed a prairie-fed 14oz Buffalo rib-eye. I ordered it rare, and it came, perfectly, rare. It was seared to perfection, only a slight dusting of salt and ground pepper with a small side of horseradish (at my request).

The veg side was steamed to perfection, crisp and warm, and served on time perfectly.
The potato done perfectly. Coated with butter, sour cream and bacon.

I've rarely had a finer steak. The service was perfect. The manners impeccable.

It was so good, I had to write a food review of it.

If anyone finds themselves in the backwoods of the Dakotas, enter civilization with a fine dining experience at The Williston.

It is a place I will return to again and again.

This is just the first of my series of restaurant reviews.
