Lemongrass Chicken.

Ok so here is a fav. of mine.

What you need.

1 large red onion ( you dont have to add all of it, but i do I love onion)
1 samall pakage of basil
2 tubes of lemongrass ( if you prefer to do it on your own good luck, very hard)
1 bottle of sesame oil ( you wont use the whole thing.lol.)
1 pakage or more if you want of chicken brests or tenders.
1-2 cups jasmine rice.
1 wok or large skillet

Chop the onion up into good chunks, dont have to be perfect.
Chop basil same.
Chop up chicken into bite sized.

Heat just a little sesame oil in a pan, throw in chicken make sure its cooked. Let that cook, then throw in the onion, until half cooked..
While that cooks heat up the rice.
Then put in the lemongrass, dont put it on high you can also add some more sesame oil if you want not too much.
When you are just about ready to serve put the basil in the mixture just to wilt it, and stir it as well. Dont leave it in too long because of the oils in the basil burn off quick.

When rice is done put that into bowls and put the lemongrass mixture over the rice.

Done.

I have two tubes of lemongrass but I can't get the lemongrass out of the tubes at all. Oil will drip out and that's it. Is there a secret to getting it out of the tube? I squeeze hard enough but it won't come out. I tried freezing it, warming it, but nothing happens. They used to make commercials about slow ketchup coming out of the bottle but this is much worse. Help!

There might be a little bit of a chunk in there, try putting something in the tube or just cut the tube open with a knife

I bought the lemon grass to make some chicken subs. I love the taste. I also wanted to make a lemongrass stuffed rolled chicken breast with a lemon sauce.

Do you have a good recipe for lemongrass soup?

I ran out of chicken, and finding chicken where I live that hasn't been injected and bleached is a challenge. I am hoping to get more on Friday. Will let you know when I do though.

I love lemon with chicken. I haven't used lemongrass on chicken before. I know I can get some at the grocery store...putting it on my list now.

I also love Jasmine Rice and prefer it over any other kind of white style rice.

Um, I am still trying to find some decent chicken. I'm hoping to get out tomorrow or Monday. Thanks for asking. Fingers crossed. The last chicken I bought was horrible and I ended up throwing it out. However since I love chicken I'll keep on trying to find some.
