The human eye relies on contrast quite often, and therefore the 'definition' you might be perceiving may actually be the colors being pushed further
apart and therefore easier to see.
So yes, you might be able to see differences between pixels easier to some degree but that doesn't mean there is more / better data in the orange
videos. In fact there appears to be less. Try it in photoshop or gimp yourself perhaps - don't take Pinke's word for it.
Is piles of other ways to measure this but just eye balling it tells a bit of a story.
