Watermelon & Feta Salad

I know this sounds a little strange, but believe me this is an amazingly refreshing salad for a hot summer day...

I've made it a few times, and it is just incredible!!


And since summer is on its way, I thought i'd give you foodies a head start to wow your guests!



1 small red onion
2 limes (juiced, or 4 depending on juiciness)
1.5 kilograms seedless watermelon (or just a decent sized melon)
250 grams feta cheese... (depending on how much you like Feta... I love it, so I use more)
1 bunch Flat leaf parsley
1 bunch Mint (chopped)
3 tablespoons extra virgin olive oil
100 grams black olives (pitted)
1 pinch of black pepper (to taste, i use half a teaspoon)

1.Peel and halve the red onion and cut into very fine half-moons and put in a small bowl to steep with the lime juice, to bring out the transparent pinkness in the onions and diminish their rasp. Two limes' worth should do it, but you can find the fruits disappointingly dried up and barren when you cut them in half, in which case add more.

2.Remove the rind and pips from the watermelon, and cut into approximately 4cm triangular chunks, if that makes sense (maths is not my strong point). Cut the feta into similar sized pieces and put them both into a large, wide shallow bowl. Tear off sprigs of parsley so that it is used like a salad leaf, rather than a garnish, and add to the bowl along with the chopped mint.

3.Tip the now glowingly puce onions, along with their pink juices over the salad in the bowl, add the oil and olives, then using your hands toss the salad very gently so that the feta and melon don't lose their shape. Add a good grinding of black pepper and taste to see whether the dressing needs more lime.

I wouldn't have ever thought this combination would work, I mean, onions and watermelon doesn't sound appealing... but as you've said it looked so tasty I had to try it...

Im glad I did, and I've made it a few times since...

I've done a similar salad in the past except I do mine with cilantro instead of flat leaf. It's a great salad and I've been surprised with how well it's gone over! Thanks for the reminder!

Haha I should have know it was a Nigella thing. Salty and Sweet. Fetta is the salty cheese innit? I forget, I eat my cheese yellow.

I can see how it works. It's not my cup of tea, but I can see it.

I know strawberries and balsamic vinegar work.

Salted plums..

Ack, now my mouth is watering for things I can only get from the local Asian store when it's shopping for milk, day.

We made this last summer at catering. The fresh mint is the kicker that makes it so worth the effort. Amazing flavor. Couldn't get enough of this.
Thanks for sharing this recipe. Btw, we used Paula Deen's version. But subtituted regular vinegar for balsamic just cut back a bit and omitted the oil. A flavor explosion to the tastebuds!

sounds awesome except for the onions. I don't do raw onion. LOL I will try this recipe though! Love mint and fruit! Adding the feta cheee sounds wonderful thanks!!!!
