Much thanks for the recipe. I just made a cream cheese yesterday evening and enjoyed it today, it was a recipe of Chef Tyler Florence. It was two blocks cream cheese and a pint of sour cream with 3 eggs, etc.

Although I enjoyed the flavor it came out too creamy for my taste. I like a texture that is chunkier and drier. Is this the way yours came out? Thick and rich and not too moist but on the drier side?

Yes. it is rather creamy but still firm and flaky, even.

What purpose does the flour serve?
That is one thing my [inferior] recipe doesn't have in it....

i believe that's what gives it 'just the right texture'.

creamy, but still firm, flaky and 'cake-like'
