Yam this tasted good...I suppose there's potassium,beta-carotene,vitamin A,C and some calcium.

4 nice size yams,peeled and sliced crosswise...1/4-inch thick rounds
2 teaspoons grated ginger root
1 tablespoon brown sugar
3/4 cup unsweetened apple juice

preheat oven 425 F

Mix everything up(I did the ziplock shake to it)
Bake uncovered in a casserole dish for about 30 min.

Yams turn out golden brown and most of the liquid evaporated...nice side dish

I love the ginger!

My family has been preparing a version of this fro many years, only instead of ginger we replace it with cinnamon and nutmeg, topped with marshmallows right before it goes in the oven. Most folks call it "candied yams".

Back in the old days I used to...battered with fish or even rolled around in shake and bake...plop,fizz...crunchy yummy yam
