I work in a kitchen. I think I'll print these out and keep them for reference.
The only one that seemed odd to me is this one:
For: 1 whole egg
Use: 2 egg yolks plus 1 Tbsp water
If you have 2 egg yolks, why wouldn't you have 1 whole egg?
