I love meat loaf, esp in the crock pot!

I actually never tried this til I had to. Years ago I was making a 3lb meat loaf for a group of people but the oven's heating element went so I had to use the crock pot. It took 9hrs but it was delicious! It's nice and juicy, no dryness! I also like to use the left over sauce or fat in the crock pot to make a sauce. Just add ketchup, worchester, little brown or dijon mustard, seasoning and a little water to left over sauce in pot. Stir til consistency of gravy, keep crock pot on warm while making sauce. When done just pour over meat loaf


Mblah's Crock Pot Meat Loaf




Ingredients
for the meat loaf
1 lb ground beef
1/4 cup chopped red pepper
1/4 cup chopped green pepper
1/2 cup diced onion
1 tbs minced garlic
1 tbs chopped fresh basil
1/2 tsp dill weed
1 cup shredded cheddar cheese
1-2 egg
1.5 cups bread crumbs (I made bread crumbs out of left over bread I made)
Fresh ground pepper
Sea Salt

Directions
Mix all ingredients in a bowl til nicely blended. Pour into crock pot and cook on low for 4.5-5 hours.
When it is done you can make your regular sauce for meat loaf or make the one I mentioned above with the left over juices in the crock pot.


The sides were simple too. I took some corn, broccoli and green beans and steamed them with some onion and bacon. Not a lot of bacon, just about 1tbs of cooked crumbs or bacon bits. I added wild rice and that was dinner!

I love the food mblah...but dang you have have taste in dinnerware too...couldn't of put it on a more perfect plate!


Looks delicious..as always...and fairly simple to replicate in our own kitchens...can't wait to try it (haven't crock potted much this month)...solid inspiration to fire it up!

Anyway...awesome as always!

I looked and started cracking up to the comments....lol

I opened chat and java sometimes freezes my other tabs so it resat the tab I had with the beginning of my thread before I started even typing it lol.

That plate I got at a thrift store lol There are two and it has a matching plate and topper. It was made by someone in a pottery class I think based on the bottom and how it's signed. Usually that is how a pottery class does their pieces. I love the plates and the other piece it came with I use for many things like cookies or brownies. Right now it's holding the meat loaf.

Here is the other piece to the plates


Here it is together. It's great for many different things I make. I got it for like 3 bucks!



You will have to try it! Add whatever you want, but to me the crock pot method gives it more flavor

I don't have a slow cooker but that is next on my list!

Crock pots are great! I have made almost everything I have made on a stove or in an oven in a crock pot!
