I love meat loaf, esp in the crock pot!
I actually never tried this til I had to. Years ago I was making a 3lb meat loaf for a group of people but the oven's heating element went so I had to
use the crock pot. It took 9hrs but it was delicious! It's nice and juicy, no dryness! I also like to use the left over sauce or fat in the crock pot
to make a sauce. Just add ketchup, worchester, little brown or dijon mustard, seasoning and a little water to left over sauce in pot. Stir til
consistency of gravy, keep crock pot on warm while making sauce. When done just pour over meat loaf
Mblah's Crock Pot Meat Loaf
Ingredients
for the meat loaf
1 lb ground beef
1/4 cup chopped red pepper
1/4 cup chopped green pepper
1/2 cup diced onion
1 tbs minced garlic
1 tbs chopped fresh basil
1/2 tsp dill weed
1 cup shredded cheddar cheese
1-2 egg
1.5 cups bread crumbs (I made bread crumbs out of left over bread I made)
Fresh ground pepper
Sea Salt
Directions
Mix all ingredients in a bowl til nicely blended. Pour into crock pot and cook on low for 4.5-5 hours.
When it is done you can make your regular sauce for meat loaf or make the one I mentioned above with the left over juices in the crock pot.
The sides were simple too. I took some corn, broccoli and green beans and steamed them with some onion and bacon. Not a lot of bacon, just about 1tbs
