They are theories of the scientific community that are capable of being falsified by tests (i.e. experiment) but that have found to yield consistent
and repeatable physical results and/or measurements.
There are no high priests per se although it is thought that pursuit of academic training in a scientific discipline up to the Ph.D. (Doctor of
Philosophy Degree) in physics or a subdiscipline is the best preparation for doing serious science. However, anyone can play. Find your subject and
develop theories about it that can be tested in an experiment and shazam you become a priest of physics. If your theory is novel, testable and focused
on a nontrivial subject you could become a Nobel Prize winner which I guess is as close as Physics comes to having a high priest.
More than places of indoctrination schools and universities are educational centers where students learn the central body of scientific knowledge that
has withstood the onslaught of experiment. This body of knowledge is typically absorbed by the student and forms the intellectual foundation for
science. Advanced coursework introduces the student to research protocols, theoretical and/or experimental design. In advanced research work new
theories describing the behavior of some part of the physical universe are developed and tested. If theory withstands rigorous experimental test a new
piece of scientific knowledge is produced and presented to the world in an article accepted for publication in a scholarly journal.
It is true that certain genius level scientists such as Newton and Einstein were able to teach themselves more than any school could. But genius is
its own school. By experience and definiton very few people even those with "genius level" IQs actually pan out to be geniuses. So for the workaday
scientist the schools and universities are absolutely necessary.
What is also necessary is a highly developed mathemtical competence. When nature speaks she does so in equations.
