I'd suggest bookmarking InstantWatcher to help out with finding Netflix content, first off.

Only hits I got when searching the docs category for 'paranormal' were the "Is It Real?" NatGeo series (a range of topics) and two others that don't look too ghostly/demonic. I don't think it's on Netflix, but if you can chase down the TV series Paranormal Witness, it's worth a watch. Not documentary, just recollections of personal accounts, but had a few pretty creepy episodes.

Good luck...if you happen to come across something else good on Netflix/Hulu, post here for us to check out!
