You start with a coupla corn tortillas ... and just a bare few drops of olive oil
Bring the pan up to heat, add the mere touch/drops of olive oil , followed by the corn tortillas.
only long enough on each side to soften and make them a bit more pliable.
Spread generously with a good coating of pre-heated refried beans ... top with sauted onions.
Fry two eggs overeasy, sprinkled lightly with cumin, chili powder, salt and cracked pepper.
some shredded cheddar:
ladle on some good homemade salsa and a dollop of sour cream:
topped with a fresh-cut sprig of cilantro
add to that some crisp torillas and extra salsa:
You'll have a breakfast that'll leave ya not wanting for lunch.
