This is a recipe I created about a year ago, I had a craving for an Mediterranean/Middle Eastern type food... So I came up with this with some stuff I had around the house... this is the first dish like this I have ever fixed... but trust me it turned out GOOD!!!

If you will forgive the style the recipe is in, I hope you can make sense of it and enjoy a good meal



*2-3 Tomatoes skinned if desired
*1 can of Asparagus
*1 can of spinach
*1 ear of corn or half a can
*Green olives - plenty
*Black olives - plenty
*1 can chick peas
*Plenty of fresh basil
*Fresh sage leaves
*Mozzarella Cheese
*Tortillas or Peta Bread


for spices i didn't use any measurements... just add to taste by using this confusing guide, lol

*pickling spice -major (spice used for canning pickles...)
*cumin - dab
*dried sweet basil - major
*Kansas city steak seasoning –dab or for a substation use Creole Seasing or Soul Seasoning
*LOTS of fresh Basil
*Some Fresh sage
*dab of black pepper
*salt to taste



drain juices from veggiess. put a little bit of oil in skillet enough to coat bottom
put a lil bit of green olive juice into skillet with oil
put in veggies
put in spices
stir
cook for 20-25 minutes or until juices/oil become "thick"

serve on a tortilla with mozzarella cheese generously on top of the tortilla
place desired amount of veggies on tortilla
then top with plenty of cheese!!! I do mean plenty!

(You can add Feta and or Goat cheese during the cooking process if you want...
but Mozzarella cheese as a topper is a must!!!
)


chicken could be used in this recipe... just pre cook it and add a lil extra seasoning to the mix



this recipe could also be used to make snack wraps as well...


it costs around 8-12 bucks to make, so its not a cheap meal by any means... but ya gotta indulge once in a while don't ya?
and it can feed 3 with hefty portions... or about 5-6 with adequate portions...

by combing my name
ERIc and sPINach and the ARO was for good measure, lol, kinda sounds like Asparagus

My wife who is a very picky eater, loves that recipe!
I'm a meat eater.... No Meat to me equals no meal, lol
but this, even without meat... is awesome!

I bring it to my family get togethers... they love it...


If you don't like something in the recipe, play with it and change it around
